4. The All American Barbecue
Barbecuing
is the same the world over, right? Think again, you might have the same
gas, heat on meat and recipes but there are
plenty of differences when you go beyond the UK.
Last month we took a look at Australia when we launched our BBQ
Christmas Holiday in Oz competition. This month we’re off to the States,
land of the free and home of the backyard BBQ. Don’t you just hate
it when someone thinks that they’re the best at something and they’re
right?
So what do the Americans do that’s so different?
They take the Barbecue seriously. No, I mean SERIOUSLY. This is not
a quick snack done for the family and Duane next door. This is a carefully
planned assault on your taste buds and waist line.
Americans like it large, not as in the evening activities of the Ibiza
generation but just damn BIG. We have a few mates round, they have ‘party
numbers’. We have a few tins of beer, they have kegs. We have a
BBQ pack from the local supermarket, they slaughter a herd.
The average American BBQ chef wouldn’t be seen dead just slapping
a sausage and burger on the grill. They’ve all got their own special
secret sauces and a fool proof method for cooking their Norfolk sized
steaks.
They know the difference between barbecuing and grilling. ‘Eh?’ I
hear you say. Check a bit further down this newsletter and you too will
know the secret.
Americans actually have regional variations in BBQ. In the Carolinas
BBQ means pork shoulder; Texans like their beef; and ribs are the thing
in Kansas City.

5.American style BBQ recipes
Here's a few American style BBQ recipes to get your mouth watering.

BBQ American Cheeseburger
450 g (1 lb) minced beef
2 tsp Schwartz American Barbecue Simply Shake
Seasoning
2 tsp Worcestershire sauce
1 medium egg, beaten
50 g (2 oz) Cheddar cheese
Mix the minced beef, American Barbecue Seasoning, Worcestershire sauce
and egg together in a large bowl. Cut the cheese into 4 cubes. Divide
beef mixture into 4. Place the cheese in the centre of each and mould
the meat into a burger shape. Grill on the barbecue for 10-15 minutes,
turning occasionally. Serve in a sesame bun with salad, ketchup or mayonnaise.
Makes 4 servings.
Kansas City–Style Pork Spareribs with
Weber Tangy Barbecue Sauce
Serious rib fans use a rub and a sauce for unmistakable barbecue
flavour. This recipe features two classic concoctions.
For the ribs:
3 tablespoons Kosher salt
2 tablespoons Hungarian paprika
1-1/2 tablespoons ground cumin
1 tablespoon ground Mediterranean oregano
2 teaspoons onion powder
1 teaspoon garlic powder
1 teaspoon freshly ground black pepper
1/2 teaspoon allspice
1/2 teaspoon ground cinnamon
3 to 4 slabs pork spareribs, about 2 pounds
each |
For the sauce:
1/2 cup chopped celery
3 tablespoons chopped onion
2 tablespoons butter
1 cup catsup
1/4 cup lemon juice
2 tablespoons sugar
2 tablespoons vinegar
1 tablespoon Worcestershire sauce
1 teaspoon dry mustard
Dash pepper |
In a small bowl combine salt, paprika, cumin, oregano, onion powder,
garlic powder, pepper, allspice, and cinnamon. Rub seasoning mix onto
ribs, pressing into surface. Place ribs in jumbo resealable plastic
bag. Close bag and marinate in refrigerator 2 hours.
Place ribs in centre of cooking grate. Grill 1 to 1-1/2 hours or until
tender.
Meanwhile, make the sauce: In a skillet cook celery and onion in butter
until tender. Add remaining ingredients. Bring to a boil; reduce heat.
Cover and simmer 15 minutes.
Brush ribs with Weber Tangy Barbecue Sauce during last 20 minutes of
grilling time. Cut into 2- or 3-rib portions. Serve with remaining heated
sauce, if desired.
Makes 8 to 10 servings.
Beer Can Chicken BBQ Recipe
Here’s
a technique that delivers great-tasting chicken and makes a lively conversation
starter as well. We’ve used one of our special
rubs, but you can sub in 2 to 3 tablespoons of your favourite one. Be
sure to take a look below at the Beer Can Chicken Roaster -
new this month at the BBQ Shop. Bottoms
up!
For the rub:
1 teaspoon dry mustard
1 teaspoon granulated onion
1 teaspoon paprika
1 teaspoon kosher salt
1/2 teaspoon granulated garlic
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon freshly ground black pepper
1 whole chicken, 4 to 5 pounds
2 teaspoons vegetable oil
1 can (16 ounces) beer (tall boy)
To make the rub:
In a small bowl combine the rub ingredients.
Remove and discard the neck, giblets, and any excess fat from the chicken.
Rinse the chicken, inside and out, under cold water and pat dry with
paper towels. Lightly spray or brush all over with the vegetable oil
and season, inside and out, with the rub.
Open the beer can and pour off half of the beer. Set the half-full can
on a flat surface and slide the chicken over the top so the can fits
inside the cavity. Transfer the bird to the grill, keeping the can
upright. Carefully balance the bird on its two legs and the can. Grill
over Indirect Medium heat until the juices run clear and the internal
temperature reaches 170°F in the breast and 180°F in the thickest
part of the thigh, 1-1/4 to 1-1/2 hours. Wearing barbecue mitts, carefully
remove the chicken and the can from the grill, being careful not to
spill the beer – it will be hot. Let the chicken rest for about
10 minutes before lifting it from the can. Discard the beer. Cut the
chicken into serving pieces. Serve warm.
Makes 4 to 6 servings.
Cheesy BBQ Popcorn
2 tbl. butter or margarine, melted
1/2 tsp. chili powder
1/2 tsp. garlic salt
1/4 tsp. onion powder
8 cups popped popcorn
1/4 cup grated parmesan cheese
Combine the first 4 ingredients; pour mixture over popcorn, stirring
to coat. Sprinkle with cheese, stirring well.

7. Grill or Barbecue? - The Great Debate
Americans speak English, well a version of it! They have their sidewalk
pavements, trunk boots, elevator lifts, trash rubbish, cookie biscuits,
candy sweets and their grill barbecues. Hang on, what's this last one;
they're the same thing aren't they?
In barbecuing, there is no greater confusion than that between the
terms "grilling" and "barbecuing".
The difference is... Grilling involves cooking with an intense heat (around
500°C) that is close to the food, and for short periods of time.
Barbecuing on the other hand, involves cooking over a low heat source
that is well below the grill, for
longer. Temperatures would typically be around 225°C or lower.
