Pepper Glazed Gammon

4 gammon steaks
1/2 tsp Schwartz Black & Red Pepper
1 tbs soft dark brown sugar
1 tbs oil
2 tbs clear honey
2 oranges
15 g (1/2 oz) butter
Snip the gammon rind at 1cm (1/2") intervals. Mix 1/4 tsp
Black & Red Pepper with the sugar, oil, honey and 2 tbs orange
juice, squeezed from one of the oranges. Brush the mixture over
the gammon and cook on the grill for 10-12 minutes, turning occasionally
and brushing with the orange juice mixture throughout cooking.
Meanwhile, melt the butter in a small frying pan, slice the remaining
orange and add to the pan together with the remaining 1/4 tsp Black
& Red Pepper. Fry the orange slices gently for 1 minute, turning
frequently.
Serve the gammon steaks with the orange slices placed on top for
decoration.
