Grilled
and Glazed Stuffed BBQ Pork Chops4 pork chops, 2" thick with pockets
for stuffing 1 cup raisin bread crumbs 1/2 cup chopped pecans 1/2
cup vegetable oil 1/2 tsp. thyme 1/4 cup cider vinegar 1/4 tsp. sage
1/4 tsp. salt 6 Tbsp. butter, melted 2 Tbsp. dijon-style mustard 1
Tbsp. honey 3/4 tsp. ground ginger Combine bread crumbs, pecans,
thyme, sage and salt. Drizzle with melted butter and toss until evenly moistened.
Spoon mixture into pockets of pork chops. Secure chops with toothpicks. For
glaze, in a small bowl, combine oil, vinegar, mustard, honey and ginger. Beat
with whisk until well blended; set aside. Place chops on cooking grid;
cook over medium heat, close hood, 20 to 25 minutes, turning once halfway through
cooking time. Baste with honey-mustard glaze during last 15 minutes of
cooking, turning frequently. Remove toothpicks before serving. Serve with any
remaining sauce. Makes 4 servings.
